Cuisines, ranked by what’s in the kitchen
Pick a cuisine and you think you know what you’re getting. The health scores complicate it. Cafe spots grade cleanest in Central Florida (93.9/100 average, 0% failing). And the freshness halo around sushi? Japanese restaurants average 85.3 — below Mexican’s 88.7. Every cuisine with at least 20 graded restaurants, cleanest to riskiest.

- 9 Steak 56% A 16% D/F 25
- 10 Chinese 54% A 15% D/F 41
Average score is the mean of every graded restaurant in that cuisine (minimum 20 to qualify). “% D/F” is the share carrying a failing or near-failing grade. A clean café and a dicey steakhouse can sit a full letter apart — the kitchen, not the menu, decides the grade.
